This Granny Smith apple cake is a simple cake that will impress your brunch guests. Think of coffee cake loaded with tart Granny Smith apples and the warm aroma of cinnamon. It goes perfectly with your morning cup of coffee or topped with some freshly whipped cream for dessert.

Whenever I do any apple baking, I break out my apple corer-peeler-slicer contraption. You can peel, core, and slice an apple in mere seconds. It definitely earns a spot in my tiny kitchen. Even though it takes up some valuable cabinet space, it is worth the sacrifice. This recipe only calls for three apples, so you could definitely get away with doing the apple cutting and peeling by hand as well.

This Granny Smith apple cake smells amazing as it bakes. I also loved how the crust on the top got nice and crunchy, while the rest of the cake stayed soft and tender. This is the perfect cake to bring into work or to share with friends, and while we tend to think of apples for fall desserts, they’re so plentiful year-round you’ll want to bake this cake in every season.
