1 small cucumber, seeded, peeled and thinly sliced
12 large strawberries, hulled and thinly sliced
1/2 bunch watercress, rinsed and dried
2 to 3 Tbsp. raspberry vinegar
1 heaping Tbsp. sugar
Salt and freshly ground black pepper to taste
Place the cucumber, strawberry slices and watercress in a large bowl. Whisk the remaining ingredients in a separate bowl, making sure the sugar is dissolved. Pour over the strawberries, cucumbers and watercress. Toss gently and chill well before serving. Serves 6.
