1-1/2 c water
1 c raisins
Bring water to boil, add raisins and let sit for 5-10 minutes. Drain raisins and save 3/4 c of raisin water. Combine 3/4 c raisin water, salt and soda. Cream sugar, egg and shortening in separate bowl. Add flour, cinnamon, raisins and raisin water to creamed mixture.
Grease and flour large cookie sheet. Pour batter into pan and spread evenly. Bake cookie cake for 13-15 minutes at 375 degrees. If desired, spread with white icing when cake is slightly cooled. Cut into squares and serve.
