Chunky Cookies

These are very thick cookies, and to mix them up right you really have to get in there and use your hands. You can add nuts, and or raisins instead of or in addition to the chocolate chunks.

Yield

2 dozen

Ingredients

1 cup butter
1 cup brown sugar
1/2 sugar
2 eggs
2 tsp vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp salt
3 cups uncooked oats
2 cups chocolate chunks

Instructions

Preheat oven to 350

Beat butter and sugars together, until creamy. Add eggs and vanilla, beating well.

Add to the butter mixture all the remaining ingredients. Drop by the TBS full onto a parchment paper lined baking sheet. Bake for 10 minutes.

Cool on pan for 2 to 3 minutes. Remove cookies from pan and finish cooling on wire racks.
