1 1/2 c softened butter, 3 sticks
1 1/2 sugar
2 egg yolks
1/2 t salt
2 t vanilla
2 1/2 c flour
1 1/2 c finely crushed plain potato chips
1 1/2 c finely chopped pecans
1/2 t finely grated lemon zest (or orange)
1/3 c sugar for dipping
5 dozen pecan halves for decoration
In a large mixing bowl, beat the butter, sugar, egg yolks, salt and vanilla until they’re light and fluffy.
Add flour, crushed potato chips, chopped pecans, and lemon zest. Mix well.
Form one-inch dough balls with your hands and place them on an ungreased cookie sheet, 12 to a standard-sized sheet.
Place sugar into small bowl. Spray the bottom of a glass wiht Pam, dip in sugar and use it to flatten each dough ball. (Dip the glass in the sugar for each ball.) Place a pecan half in the center of each cookie and press it down slightly.
Bake at 350 degrees for 10 to 12 minutes, or until the cookies are starting to turn golden at the edges. Let them cool on the cookie sheet for 2 minutes and then remove them ro wire rack to cool.
