Chicken breasts wrapped around a sweet-tart filling of cranberries and maple syrup. –Coonamesset Inn, Falmouth, Massachusetts
4 boneless chicken breasts (6 ounces each)
2 tablespoons butter
4 teaspoons pure maple syrup
1/2 cup sliced frozen cranberries
1 tablespoon chopped chives
1 cup evaporated milk
1 pound fresh bread crumbs
Hot fat for frying
Take skin off chicken and pound breasts out to about 1/4-inch thickness. Put in center of each breast 1/2 tablespoon butter and 1 teaspoon maple syrup; divide amongst the chicken the cranberries and chives. Roll up each breast and shape so ingredients stay inside. Put in freezer till hard enough to handle. Dip in milk and coat with bread crumbs, making sure ingredients are sealed inside. Fry in 350 degrees F fat till lightly browned. Bake in 350 degrees F oven 15-20 minutes or until done.
