Broccoli Salad with Golden Sorghum Dressing

The secret to this recipe is the sorghum in the dressing. Golden, sweet sorghum tastes best, if available. Otherwise you may need to adjust the quantity to taste.

Yield:

6 to 8 servings

Ingredients

2 bunches raw broccoli, cut apart
1/2 red onion, diced
1 can sliced water chestnuts
1/2 cup raisins
10 to 12 slices bacon, fried and crumbled

Instructions

In a large serving bowl, combine vegetables and raisins.

Dressing

Ingredients

1 cup real mayonnaise
1/3 cup honey
2 tablespoons golden sorghum
1 tablespoon vinegar
salt and pepper to taste

Instructions

Combine dressing ingredients in a jar and shake well (or whisk in a bowl). Pour over salad, and allow to marinate 1 to 3 hours.

Stir in crumbled bacon just before serving.
