The resulting texture has just the right balance of crunch and chew, while the flavor is sweet, nutty, and, frankly, addictive. Recipe from Lou’s Restaurant & Bakery, in Hanover, New Hampshire.
¾ cup salted butter
½ cup canola oil
1 cup mild honey (such as clover)
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
5½ cups rolled oats
½ cup shredded sweetened coconut
¾ cup chopped walnuts
⅔ cup sesame seeds
½ cup sunflower seeds
¼ cup sliced almonds
1 cup raisins (optional)
Fresh berries, for serving (optional)
Preheat oven to 350° and set racks in the top and bottom thirds of the oven. Line two baking sheets with parchment paper or nonstick mats.
In a 3- or 4-quart pan over medium heat, melt the butter. Add the oil and honey, and stir. Remove from heat. Stir in vanilla and cinnamon, and whisk to combine.
In a large bowl, stir together all remaining ingredients except raisins. Pour the butter mixture over the oat mixture and stir.
Divide the granola between the baking sheets and spread to an even thickness. Bake, stirring every 5 minutes, until browned and fragrant, 25 to 30 minutes. Remove from oven and let cool on the baking sheets. Sprinkle with raisins, if using, then store in a tightly sealed jar. Serve topped with fresh berries, if desired.
