Watermelon-Cucumber Cooler

The seltzer is a perfect finish, but you can also add a glug of vodka and call it a cocktail. For a slushy treat, freeze the watermelon chunks before blending.
2 ¼ pounds peeled watermelon, cut into large chunks
½ medium cucumber (6 ounces), peeled and cut into large chunks
1 ½ cups water
¼ cup granulated sugar
Juice of 2 limes
2 tablespoons packed fresh mint leaves
Seltzer
In a blender, combine the watermelon, cucumber, water, sugar, lime juice, and mint leaves. Blend on high until the mixture is very smooth and liquid. To serve, fill a cup three-quarters full with the watermelon mixture, then top with a splash of seltzer.
