3 eggs
3 TBS coconut oil or butter, melted
1 TBS honey
1/4 tsp vanilla
1/4 tsp salt
2 TBS sifted coconut flour
1/4 tsp baking powder
1 TBS cornmeal
Blend together eggs, butter, honey, vanilla and salt. Combine coconut flour, baking powder and cornmeal. Whisk into batter until there are no lumps. Pour batter into greased muffin cups. Bake at 400 for 12-15 min. makes 6 muffins.
*Can make reduced sugar by omitting honey and using 30 drops of liquid stevia and 3 TBS coconut milk.
