Banana Pudding

We first ran this banana pudding recipe, made with vanilla wafer cookies and thinly sliced bananas, back in 1983, but we think it’s just as delicious today.

We first ran this banana pudding recipe, made with vanilla wafer cookies and thinly sliced bananas, back in 1983, but we think it’s just as delicious today. This rich pudding is good warm or cold.

Yield

Serves 6 to 8.

Ingredients

1 cup flour
4 egg yolks
1/2 cup sugar
1 quart milk
1 teaspoon vanilla
1 package vanilla wafers
Several (3 or 4) bananas, thinly sliced

Instructions

In a saucepan, combine flour, egg yolks, sugar, and milk. Mix until smooth. Bring slowly to a boil and cook until thick and the consistency of pudding. Stir in vanilla. In a 2-quart casserole dish, place a layer of vanilla wafers, a layer of thinly sliced bananas, and about half of the pudding. Repeat, working quickly because the heat of the pudding turns this into a cakelike mixture.
