Banana Bread

No mixer is needed for this quick bread. As with most other batter breads, it is important not to mix it too much! Add 1/2 cup chopped walnuts or raisins for additional flavor. –The Hedges, Blue Mountain Lake, New York

Yield:

Makes 1 loaf.

Ingredients

1-1/4 cups flour
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup shortening
3 small, ripe bananas
2 eggs, beaten

Instructions

Preheat oven to 350°F. In a bowl sift together the flour, sugar, salt, and baking soda. Using a pastry blender or two knives, cut in the shortening until the mixture is crumbly. Mash or purée the bananas and add to the flour mixture along with the beaten eggs. Fold together quickly. Pour the batter into a greased 8-1/2×4-1/2-inch loaf pan and bake 45-60 minutes or until a toothpick inserted in the center comes out clean.
