3/4 cup wheat bran
1 cup ap flour
3/4 w.w. flour
2 tsp baking powder
1 tsp baking soda
pinch salt
1 tsp cinnamon
1 cup soured milk or buttermilk
3/4 cup brown sugar
1/3 cup melted butter
2 eggs
3 ripe bananas – mashed
2 tbsp OJ
1 tbsp OJ
1 tbsp orange peel
1/2 cup raisins – optional
1/2 cup chopped walnuts (optional)
Oven 350 deg
Stir together bran, flours, powder, soda and salt and cinnamon; set aside
In sep bowl – beat together milk, brown sugar, butter, eggs, bananas, OJ, and peel. Fold into dry ingredients – just until moistened.
Stir in raisins and nuts.
Spoon into a buttere 9″ x 5″ loaf pan.
Bake for 55 – 60 minutes – or until pick inserted comes out clean.
