Layers of baked sweet potatoes and apples topped with sweet maple syrup make this recipe a winner in our book.
3 large apples
3 tablespoons butter
3 large sweet potatoes, boiled and skinned
1 teaspoon salt
1/2 cup maple syrup
Core, pare, and slice the apples, and fry them in butter until light brown. Slice the potatoes. Arrange the apples and potatoes in alternate layers in a buttered baking dish. Sprinkle with salt. Pour the syrup over the dish and dot with more butter. Bake in a moderate oven (350 degrees F) for about 35 minutes. (Note: Cornflakes may be crumbled over the surface of this dish before dotting it with butter, or it may be topped with a layer of marshmallows.)
