Shredded beets are enrobed in a lightly thickened citrusy sauce.
1/2 cup orange juice
1 tablespoon lemon juice
1/4 cup honey
4 tablespoons butter
1 tablespoon cornstarch
1 tablespoon cold water
1-1/2 pounds beets, peeled and shredded
Salt and freshly ground black pepper
1. Preheat the oven to 350°. Generously butter a 1-1/2-quart baking dish. In a small saucepan, combine the orange juice, lemon juice, honey, and butter. Heat until the butter is melted. Remove from the heat. Dissolve the cornstarch in the cold water and stir into the orange juice mixture.
2. Place the shredded beets in the prepared baking dish and season with salt and pepper. Pour on the orange juice mixture and stir to combine. Cover the dish and bake for 20 minutes. Remove the cover and bake for 10 to 15 additional minutes or until the beets are tender.
