3 eggs, separated
1 cup milk
1/2 cup butter, melted and cooled
1/2 cup grated apple
1 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Beat the egg whites into stiff peaks and set aside.
In a small bowl, stir the egg yolks, milk, butter, and apple until well mixed. In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, sugar, salt, nutmeg, and cinnamon. Carefully combine the dry ingredients and apple mixture until just moistened. Gently fold in the egg whites.
Cook the waffles according to the manufacturer’s instructions on the iron. Serve garnished with apple slices and accompanied by Craignair Inn Apple Cider Syrup.
2 cups apple cider
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup maple syrup
In a small saucepan, combine the cider, nutmeg, and cinnamon. Bring to a boil, lower the heat, and simmer until reduced approximately by half. Stir in the maple syrup and simmer until slightly thickened.
