Homemade Apple Pie

Gravensteins, Rhode Island Greenings, Roxbury Russets and Cortlands are among the traditional Yankee cooking apples. The familiar McIntosh is as good as any of these.


4 to 5 cooking apples, depending on size
3/4 cup sugar, if you like a tart pie
nutmeg or cinnamon, optional
pastry for a 9-inch pie


Pare, core, and slice the apples and arrange them with the sugar in an unbaked pie shell. Cover with pastry for the top. Make several slits in the top crust for steam to escape and crimp the edges firmly. Brush the top crust with milk and sprinkle a teaspoon of sugar on it.) Bake at 400 degrees F for 10 minutes, reduce the heat to 350 degrees F and cook 50 minutes longer. Serve hot with Vermont cheese.
