Gravensteins, Rhode Island Greenings, Roxbury Russets and Cortlands are among the traditional Yankee cooking apples. The familiar McIntosh is as good as any of these.
4 to 5 cooking apples, depending on size
3/4 cup sugar, if you like a tart pie
nutmeg or cinnamon, optional

Pare, core, and slice the apples and arrange them with the sugar in an unbaked pie shell. Cover with pastry for the top.
