We’re going old school in this season 4 segment of Weekends with Yankee (episode 406). Amy heads to Portsmouth, New Hampshire to meet with chef David Vargas of Vida Cantina, specializing in traditional Mexican cuisine. His trademark is his homemade corn tortillas made out of heirloom corn varieties sourced from Tuckaway farm in Lee, New Hampshire. The heirloom corn provides a depth of flavor absent from store-bought tortillas, making David’s tortillas such a hit that he now co-owns a small factory which provides them to other local restaurants. Amy joins David as they check out the different corn varieties at Tuckaway Farm before making their own lobster tacos, a traditional Mexican dish with a New England twist.
