Strawberry-Rhubarb Crisp
In this strawberry rhubarb crisp recipe, the familiar combination of rhubarb and fresh strawberries is baked under a light crumbly crust. Serve warm with slightly softened vanilla ice cream spooned over the top.

You can still save recipes to your recipe box using the link that says “Add to Recipe Box” which appears directly above the photo on the recipe page (not in the newsletter).
Would love to have the amount of rhubarb in cups chopped up. Easier than weighing for pounds.
I also prefer old method of saving recipes. There is NO link under the photos that says “Add to Recipe Box” in my e-mails from Yankee Magazine newsletters. I very much look forward to receiving the newsletters and checking out/saving recipes! Hope you can help with this issue. Thank you!

Thanks for your feedback! We made some changes to our newsletters last year and the new process for saving recipes to your recipe box is to click the link in the newsletter email and go to the recipe itself. There you can print the recipe as well as save it to your recipe box. Hope this helps!
I agree 200%/ I grow rhubarb and chop it and measure by cups!! Or please put both pounds = cups

We had rhubarb growing in our back yard as a kid, does that happen anymore? I would grab a stalk, wash it off, and eat it…. Yum! Does rhubarb have many calories? Will have to try this recipe, thanks!

Is it possible for this Floridian to grow rhubarb?
One pound of rhubarb equals 3 cups chopped. 3 cups chopped equals 2 cups cooked. Hope this helps!

Rhubarb is a sure sign of Spring here in Maine! Very easy recipe, thank you for sharing. My grandchildren love it warmed with vanilla ice cream! Yummy!
when growing my rhubarb the center stalk grows taller and flowers and goes to seed.what do I do with it?
When I see my rhubarb starting to bolt, I cut that stalk out-if this is any answer to your problem.
This is for Ann whose rhubarb goes to seed. When you see the seed pods form on the plant, pull them off and don’t let them go to seed. That way your rhubarb will continue to produce. I’ve harvested rhubarb as late as October here in Indiana.
I just made this dessert and it was unbelievable! I forgot how delicious rhubarb and strawberry tastes and the crumble topping is truly wonderful! I initially thought that 1 and 1/2 pounds of rhubarb was way too much, but it was perfect. I followed the recipe and wouldn’t change anything. I the typically do not make crisps as the crumb topping just hasn’t been that great. It was a hit at my dinner with friends. I will be making again and have already shared the recipe. Thank you!

Looks good, but for me, ditch the strawberries.
I love the recipes but would like to have a box to save them. I never can find the one I printed when I need it. Can you go back to having this option ? I don’t “pin”, it’s another site that is too tedious to navigate.
I remember the rhubarb in my Memas huge rhubarb garden. My cousins and I would crawl under the leaves and eat the stalks with either salt or sugar. c couldn’t wait for the pies or muffins. The leaves were as big as elephant ears.
