Chicken Pot Pie with Herbed Mashed-Potato Crust

The ultimate comfort food, chicken pot pie is usually topped with a buttery pastry. But here, the topping is made from that other comfort classic, mashed potatoes.

Yield:

6 to 8 servings

Ingredients

5 medium-size potatoes (about 1 1/4 pounds total), Yukon Golds or russets, peeled and cut into 1-inch pieces
3/4–1 cup half-and-half
1 1/2 teaspoons chopped fresh thyme leaves
1 1/2 teaspoons finely chopped fresh rosemary
Kosher salt and freshly ground black pepper, to taste

Instructions

Bring a large pot of lightly salted water to a boil over high heat. Add the potatoes and cook until tender when tested with a small, sharp knife, about 20 minutes. Drain thoroughly and return to the pot.

Mash the potatoes using a potato masher and add ¾ cup half-and-half, making sure that the liquids are absorbed into the potatoes. Add the remaining ¼ cup half-and-half if the potatoes seem dry. Add the thyme, rosemary, and salt and pepper to taste. Set aside.

  2. We have been slogging through 80-90’s all of September and October. First cool front of the fall has arrived with 50’s and rain. Perfect weather for a chicken pot pie. Love the shepherd’s pieesque mashed potatoe crust. Still though, the crust is the best part of it. Do a turkey pot pie for thanksgiving.

  4. This looks to be a family favorite. The filling, just poured over mashed potatoes is a great way to use up leftover chicken or turkey. Ive made similar after thanksgiving in a deep pie crust, store bought frozen and topped with rolled Pillsbury crust. Only difference is to add some chopped red potatoes, par boiled. I make one to serve tonight and freeze one. The filling freezes nicely, so all you need to do is make mashed potatoes, white or sweet., thaw and heat filling in microwave, then pour over potatoes or rice. The frozen pies thaw overnight and while you’re at work, then bake for 45 mins to an hour, until center is hot and crust browned and bubbly. Couldn’t use up left over turkey in a better way. Chop, mix up, then freeze in quart sized bags to feed four. When you get home, mash up a few potatoes,, forgo the butter, mash with half and half and poultry spice. While potatoes are boiling, microwave the turkey and veggies in a glass bowl. It all comes together in under 40 minutes.

  5. Made this with few variations. Skipped the wine and used an extra 1/4 cup chicken broth. I boiled about 5 pounds of bone in chicken leg quarters and had plenty of meat and broth for two casseroles. It was a huge hit! Looking forward to giving it another try with a few vegetable substitutes and sweet potato replacing the mashed. Fantastic!

    1. Hi Molly! In your computer’s print settings, you may have the option to choose which of the pages you’d like to print. If not, I recommend copying and pasting the text you’d like to print into a separate Word document and then printing that! Hope this helps.

  7. Can chicken pot pie recipe be made gluten-free. Potato crust would be a start. The all-purpose flour kills it for us. What about using corn or rice flour?

  9. Delicious! I made this last night. I halved the recipe as we are only 2 people. It came out a little thicker than I wanted. Next time I will add just a LITTLE more chicken stock! I may have misjudged my calculations for making half the recipe. We both loved the herbed mashed potato topping. The thyme and rosemary were perfect. Loved the flavor. Will make again! Thank you for your great recipes.

  11. Wonderful and warming casserole. Made half a recipe (just my husband and I) and it was the perfect amount for dinner with enough leftover for lunch. So very tasty! Husband asked that this be put on repeat.

  12. For printing….this is what I just did…I highly the part I wanted to print, right clicked on the mouse, the option to print or copy came up. I clicked on print. And it printed exactly just that part of the post. The print came out perfect.
