Scented with cinnamon and ginger, this sweet and juicy plum and raspberry cobbler is the perfect summer dessert.

Yield:

6 large or 8 small servings

Ingredients

7 large, ripe plums, pitted and cut into 1/4-inch-thick wedges
1 pint fresh raspberries
1/4 cup granulated sugar
2 tablespoons unsalted butter
1/2 teaspoon ground cinnamon
Pinch salt

Instructions

In a medium-size pot over medium-high heat, stir together the fruit, sugar, butter, cinnamon, and salt until the plums are tender and release some of their juices, about 6 minutes. Set aside.

    1. Good question but I’m thinking you need to keep a little out to use to brush the tops of the dough and help keep the sugar in place. And/or because depending on temps and humidity you may not need all of the cream to bring the dough to the correct level of moistness? Sounds like two good reasons to me from baking other dishes.
