1 3/4 cups water
1/4 tsp sea salt
1 1/2 cups couscous
1 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
1/2 cucumber, peeled, seeded and chopped
1 cup tomato, seeded and chopped
1 cup feta, crumbled
Dressing
1/3 cup fresh lemon juice (about 3 large lemons)
3 TB olive oil
1 tsp allspice
1/2 tsp cinnamon
sea salt, to taste
ground pepper, to taste
Bring the water to a boil in medium saucepan. Stir in salt and couscous, cover and remove from heat. Let stand for 5 minutes then fluff with fork.
Whisk together dressing ingredients. Mix together couscous, parsley, mint, cucumber, tomato, feta and dressing.
