1/2 cup soft butter
2 cups confectioners’ sugar
1 large egg
1/4 teaspoon salt
1/2 teaspoon vanilla
2 baked 8″ pie crusts
1 cup heavy whipping cream
1 cup drained crushed pineapple
1/2 cup chopped pecans
Cream together the butter and sugar and add the egg, salt, and vanilla. Beat well. Spread this mixture in the two crusts. Chill. Whip the cream and pile it, the fruit and the nuts on top of the chilled filling. If you wish to make only one pie, halve the above ingredients and use one small egg.
