Herbed Pork Chops
1 (4 oz.) lean boneless center-cut loin pork chops
1/4 cup fine, dry breadcrumbs
1 1/2 teaspoons dry parsley flakes
1/4 teaspoon died whole rosemary, crushed
1/8 teaspoon pepper
1/4 cup Dijon mustard
Cooking spray
Trim fat from pork chops. Combine breadcrumbs, parsley flakes,
rosemary, and pepper. Brush Dijon mustard over both sides of the
pork chops. Dredge in breadcrumb mixture.
Coat a large non-stick skillet with cooking spray. Place over medium-
high heat until hot. Add pork chops and cook 4 to 6 minutes on each
side or until tender.
