Few desserts in life are as classic as the chocolate chip cookie, but despite their simple perfection, variations abound. We just can’t seem to stop fiddling with the recipe to indulge our passion for nuts, oatmeal, peanut butter, extra chocolate, dried fruit, or (my new personal favorite) coffee. Ladies and gentlemen that share my love for all things java, may I please introduce the Coffee Chocolate Chip Cookie!

This recipe yields a thin, crisp cookie with a slightly chewy center. The flavor of the coffee is pronounced, but not overpowering. This little cup of instant coffee granules mixed with boiling water does all the work. Butter, brown sugar, and chocolate chips lend even more flavor. Yankee has quite a few crispy cookie fans that were more than happy to serve as taste testers, but they had to act quick. These cookies didn’t last long!
