1 pound dates, pitted
1/2 cup sugar
1/2 cup water
1 cup soft butter
8 ounces cream cheese
2 cups flour
1/2 teaspoon salt
Confectioners’ sugar
Combine dates, sugar, and water, and cook until thick, stirring constantly. In another bowl, cream butter until fluffy. Add cream cheese and beat well. Blend in flour and salt, mix well, and shape into 2 balls. Chill dough for several hours. Roll dough to 1/8-inch thickness and cut into rounds with a 2-inch cookie cutter. Place 1 scant teaspoon date filling on each circle. Fold dough over, but don’t pinch edges together. Place on a greased cookie sheet and bake for 15 minutes at 375 degrees F. When cool, sprinkle with confectioners’ sugar.
