Cranberry Parfaits
Photo Credit : Francine ZaslowAs long as your cranberry sauce is firm and doesn’t have too many spicy ingredients, your favorite recipe should work. (My cranberry chutney with curry might not do for dessert, so here I used a cranberry-apple compote.) Same goes for the granola–use your own recipe, or a good store-bought one will do fine.
1-1/2 quarts vanilla yogurt (or vanilla ice cream)
3 cups leftover cranberry sauce
3 cups granola
Into wide-mouth parfait glasses, scoop 1/2 cup yogurt (or ice cream). Top with 1/4 cup cranberry sauce and a few tablespoons of granola. Repeat for a second layer. (Or make just one layer, with double the ingredients.)
