  1. I’ve made this several times and my husband who is not Irish loves it. It’s easy to prepare and a nice change from our usual chicken or beef dinners.

  2. After you have finished cooking the meat, cover it with a honey and Dijon mustard glaze and bake at 350 for 30 minutes.

Even though I am living in Westgern PA, I have a very strong New England attitude – especially for some traditions – like Corned Beef & Cabbbage or Corned Beef Hash for breakfast with a Fried Egg on it. The best YUM. I even got adventurous one day and brined my own beef. I bought a decent sized crockto do the brining in and it makes a great place for dry florals when I am not aging corned beef. Whether I am in the North Shore of MA or in Western PA, New England foods really makes me even “talk funny”!
