Chai Maple Syrup

Infusing maple syrup with ginger, cardamom, and cinnamon—a trick we learned from chef Charlie Menard—adds a warming kick. Try this chai maple syrup on your pancakes, oatmeal, and ice cream. It can also be used to flavor tea, or even cocktails.

Yield:

2 cups of syrup

Ingredients

2 cups maple syrup
2 cinnamon sticks
2 teaspoons grated fresh ginger
1/2 teaspoon ground cardamom

Instructions

Place all ingredients into a medium-size saucepan over medium-high heat and bring to a simmer. Reduce heat and keep hot (but below a simmer) 12 minutes. Remove from the heat and let cool 5 minutes. Strain the syrup and enjoy.
