My mom used to make this for my brother and I when we were kids. There was nothing better than coming in from making snowmen to smell this wonderful recipe.
1/2 stick butter (1/2 cup)
1 Large Onion
3/4 C. All purpose flour
4 Cans of ready to serve chicken broth
8-10 C. Water
10-12 Large Potato
1 C Chopped ham
4 C. Shredded ColbyJack or (your favorite cheese)
1 tsp Salt
1 tsp Pepper
1 tsp Crushed red pepper
3 C. Milk
Put water into lart stock pan, dice potatos and add to it bring to a boil and continue to boil for aprox. 15 minutes. (you don’t want them mushy) While those are cooking put on a 10-12″ deep frying pan melt butter and add onion (chooped not diced) saute’ until onion is transparent, stir in flour stir until all butter is absorbed into flour. Slowely stir in 2 cups of water from the potatos mixture should be creamy, add ham, salt pepper and red pepper transfer to a stock pan and slowly stir in chicken broth, drain water from prepared potatos and add potatos to chicken broth and onion mixture bring to a boil and simmer 15-20 minutes. Add milk and cheese stir until cheese is completely melted and simmer for another 10 minutes. Serve when ready.
