3 chicken breasts, halved, boned, and pounded flat
6 slices Prosciutto or country ham
salt and pepper
6 slices Provolone cheese
butter
cream sauce
1/2 cup grated Parmesan cheese
With chicken sections flesh-side up, place a slice of Provolone cheese, a slice of ham, and a pat of butter on each section. Roll chicken together tightly and fasten with a toothpick. Place, toothpick up, in broiler and cook at 350 degrees F for 45 minutes or until tender. Meanwhile, make the cream sauce, and stir in the Parmesan cheese. When chicken is ready, arrange pieces on a platter and pour the sauce over them. Guests should beware lest the first prick of the fork cause a butter volcano. Else, a delicious dish!
