for every pound of ground pork or ground turkey add 1/8 tsp nutmeg,
1/4-1/2 tsp each thyme, sage, garlic powder, and salt. You can also add
Worcestershire sauce and a little ketchup. To jazz it up even more
Italian style put some dried rosemary, basil, a bay leaf and fennel seeds in a
spice grinder or blender and grind to a powder and add that to the
above mixture along with about a 1/4 cup red wine and grated parmesan. Just
mix it with your hands like you were making meatloaf. Make it into patties,
meatballs or just crumble and brown. I mix it up and freeze it to cook
later whenever I need it. Great in any recipe calling for sausage or
just plain with your eggs and biscuits in the morning.
