It’s silky, with a perfect sweet/salt balance, thanks to a six-hour rubdown with a salt-and-brownsugar mixture and steady smoking over hickory, apple, or cherry wood.

We’ve had enough overcooked and oversmoked bluefish to nearly give up on this hardy beast that stalks the New England waters each summer. But John and Hali LaFountain use just the right combination of smoke and salt (and sometimes cracked pepper) to produce a wonderfully meaty flavor and rich texture. It’s bluefish as it’s meant to be. Serve it on crackers, in a pate, or even straight out of the package. We do it all the time.

Jake and Koreen Henne produce their delectable maple-cured and hickory-smoked bacon not only for their own customers; they also smoke bacon, hams, hocks, and jowls for area farmers. When farmers are trusting their goods to you, that’s a vote of confidence. This full-service butcher shop also sells excellent sausages and all the regular cuts, but it’s that maple-scented bacon that we crave the most.
