This is a cool and refreshing summer soup. Watermelon is also a great source of vitamins A and C.

- 9 cups (6 pounds) seedless watermelon, diced
- 2 tablespoons, chopped fresh mint
- 1 tablespoon sugar
- 1 teaspoon ginger, chopped
- 3/4 cup water mixed with 1/4 cup sugar
- 2 tablespoons fresh lemon juice
