Taco Soup

We love this served with grated cheese and tortilla chips.

Yield: 8 servings


  • 2 pounds gound beef
  • 1 onion, diced
  • 1 46-ounce can V8 juice
  • 1 15-ounce can corn, undrained
  • 1 27-ounce can kidney beans, undrained
  • 1 package au jus mix
  • 1 package taco seasoning mix
  • 1 green pepper, finely chopped
  • 1-1/4 cups rice, uncooked
  • 2 corn cans water


Brown ground beef. Drain fat. Add onion, V8 juice, corn, kidney beans, au jus mix, taco seasoning, green pepper, rice and water. Cook in large pot; simmering until rice is cooked and onions and green pepper are soft.
