Susi’s Granola Cookies

Susi's Granola Cookies

I created this recipe for my husband who was really into health food. This cookie is the first to disappear!

Yield: 4 to 5 dozen

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar (packed)
  • 1 cup unsalted butter
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 boxes Sunbelt Fruit and Nut Granola Cereal
  • 1 to 2 packages dried apricots, chopped
  • 1 package dried pineapple, chopped (optional)
  • 1 package dried cherries, chopped (optional)
  • 1 package dried mango, chopped (optional)

Instructions

Mix all ingredients in a large bowl. Let sit to soak up moisture. Drop cookies onto ungreased cookie sheets and bake at 350 degrees for 7 to 10 minutes.

Additional Notes:

Use at least one of the optional fruits with the apricots. Dough keeps well in the fridge.
