Stuffed Acorn Squash

This makes a nice supper dish.

Yield: Serves 4


  • 2 acorn squash
  • 1-1/2 cups chopped ham
  • 1/2 cup cooked rice
  • milk or cream
  • salt and pepper
  • butter
  • bacon strips


Cut squash in half and remove seeds and fiber. Season with salt and pepper, and dot with butter. Bake in a moderate oven (375 degrees F) for 30 minutes. Remove and fill with a mixture of ham and rice moistened with a little milk or cream. Spread a strip of bacon cut in two over each half, and return to the oven for 10-15 minutes.
