Our favorite salad and our very favorite way to enjoy spinach. But then, we’re partial to the stuff.
Yield: 4 servings.
- 1 pound fresh spinach
- 2 hard-cooked eggs, cut into wedges
- 1 large ripe tomato, cut into wedges
- 1/2 red onion, thinly sliced
- 1/2 teaspoon salt
- 1 clove garlic, halved
- 4 slices bacon, crisply fried and crumbled
InstructionsWash the spinach, remove stems and tear leaves into bite-size pieces. Dry thoroughly and chill for 2 hours.
Just before serving, sprinkle the salt in a salad bowl and rub the bowl with garlic halves. Add all the other in-gredients and toss with Golden Salad Dressing.
