Siberian Quiche

Yield: 8 large servings


  • 8 large eggs
  • 1 pound Jimmy Dean sausage
  • 1 pillsbury roll pie crust
  • 1/2 large onion, grated
  • 3/4 cup mushrooms, chopped
  • 4 whole jalapeno peppers, grated
  • 1 pound sharp cheddar, grated


Form the pie dough into a large deep pie pan, prick the bottom to prevent air pockets. Make an aluminum edge out of tin foil, with 3/4-inch strips to prevent edges from over-browning. Can remove for the last 5 minutes of baking.

Mix sausage, mushrooms, onions, grated peppers, and saute in a skillet on low heat until browned. Set aside. Then, in a large bowl, beat eggs, stir in grated cheese, add in meat mixture slowly stirring until well-blended. Pour into pie crust and bake at 350°F until firm in the center. Approx. 45 minutes.
