Seven Layer Casserole

This seven layer casserole is an easy one-dish-meal the whole family will enjoy.

Yield: 6 to 8 servings


  • 1 cup uncooked rice
  • 1 can whole kerrnel corn (drained)
  • 8-ounce can tomato sauce
  • 1/4 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 pound ground chuck
  • 4 strips bacon (maple is great)
  • salt and pepper to taste
  • 1 cup shredded cheese (optional)


Peheat oven to 350 degrees. Place all ingredients in a 2-quart baking dish sprayed with cooking spray and cover with lid. Bake for 1 hour then remove lid and cook 30 to 35 minutes more. Top with shredded cheese for the last 10 minutes, if you like.

    So easy to make and so hard to keep the husband from taking it out before it’s done cooking. Wonderful for potluck dinners.
