Quick Pots de Creme

This is a rich-tasting, easy version of the classic French dessert. It’s quick enough to make any time, and can be fancy enough for a festive meal.

Yield: 4 servings

  • 1 egg
  • 1/2 cup sugar
  • 2 tablespoons Kalua
  • 1 cup semi-sweet chocolate bits
  • 2/3 cup milk
  • Whipped cream or whipped topping
  • Garnish: chocolate sprinkles and/or chocolate syrup

Start the milk to heat over medium heat.

While the milk is heating, place the egg, sugar, liqueur, and chocolate in a blender container. Blend together to chop up the chocolate bits.

When the milk is near boiling, pour it over the mixture in the blender and blend for 1 minute. This will dissolve the chocolate and cook the egg. Pour mixture into serving dishes and refrigerate until set, 20 minutes or more.

When ready to serve, remove from refrigerator and top with whipped cream or topping, then garnish as you like.

You should be able to substitute other flavor baking chips for the chocolate, such as butterscotch or peanut butter, with interesting results. Change the garnishes to suit the pudding flavor.

I lost track of this recipe and the name just came to me as I was searching my recipe files. This is so fast, easy, and very smooth and rich. I garnish it with chocolate covered coffeebeans and whipped cream. I made 24 of these at once for an elegant bridal shower. Placed the silky pudding into colored plastic cups and added flower stickers to the outside for the presentation. Feast for the senses.
