Pumpkin Roll

A delicious old family recipe for a pumpkin roll which is prepared as a Thanksgiving and Christmas holiday dessert or snack.

Yield: 1 roll


  • 3 eggs
  • 1 cup sugar
  • 1 cup pumpkin (cooked)
  • 1 tsp lemon juice
  • 3/4 cup flour
  • 1/2 tsp salt
  • 1 tsp. baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp. nutmeg
  • 1 cup confectioner's sugar
  • 1 - 8 oz. pkg cream cheese
  • 1 T butter
  • 1/2 tsp. vanilla


Beat together eggs, sugar, pumpkin and lemon juice. Sift together flour, salt,
baking powder, cinnamon, ginger, & nutmeg. Blend all sifted ingredients into
pumpkin mixture.

Grease & flour cookie sheet w/sides. Spread the cake mixture evenly on a
cookie sheet. Bake at 350 deg. for 15-20 minutes. Cool for 5 minutes.

Sprinkle clean towel with some confectioner's sugar; flip cake on towel & roll. Let stand until completely cool then unroll.

For filling, combine one (1) cup confectioner's sugar, cream cheese, butter, & vanilla. Beat until it is the consistency of icing. Spread on cake. Roll cake back up; chill in refrigerator one (1) hour before slicing and serving.
