Pecan Pie Mini-Muffins

Yield: 2-1/2 dozen muffins


  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2/3 cup butter, melted and cooled
  • 2 eggs, beaten
  • cooking spray


Preheat oven to 350 degrees . Combine brown sugar, flour, and pecans in large bowl. In small bowl combine butter and eggs. Stir in flour mixture just until moistened. Grease mini-muffin cups and fill 3/4 full. Bake 20 to 25 minutes. Remove immediately to wire rack to cool.
