Chocolate-Covered Peanut Butter Easter Eggs

Peanut Butter Easter Eggs

Ingredients

  • 1 c. peanut butter
  • 2 1/2 c. plus 2 tbsp. confectioners' sugar
  • 1/2 c. butter or margarine

Instructions

Cream peanut butter and margarine. Add confectioners sugar. Shape into eggs. Chill and coat with Chocolate Easter Egg Coating.

Chocolate Easter Egg Coating:

Ingredients

  • 1 8 oz. chocolate bar
  • 1 sq. unsweetened chocolate
  • 2 tbsp. shortening
  • 1 tbsp. shaved parowax

Instructions

Melt all ingredients together in pan over hot water (not boiling). When melted, dip eggs quickly with a table fork and place on wax paper or cookie sheet to cool.
