Oyster Casserole

I’ve taken this to potluck suppers and everyone just loves it and asks for the recipe.

Yield: 6 to 8 servings.


  • 1 can cream-style corn
  • 1 jar oysters with juice
  • 1 package (sleeve) saltine crackers
  • 2 eggs
  • 1/2 cup shredded cheddar cheese
  • salt and pepper


Preheat oven to 375 degrees.
Mix all ingredents in a casserole dish, except 1/4 cup cheddar cheese, try to blend in the oysters as well as possible (they could even be chopped up before adding).
Sprinkle remaining 1/4 cup shredded cheese on top before baking.
Bake for 30 to 45 minutes.
