  • chunks of onions - five pounds worth
  • scantly cover with water. bring to boil - top with lid and simmer for 24 hours (crockpot is great for this)


add a wee bit of water when peeking at - if needed
when concentrated into about 2 1/2 pints of dark brown slightly lumpy "honey" break it up into uniform consistency - salt to taste and simmer uncovered until any excess liquid evaporates.
