No Sugar Muffins

Yield: 6 Muffins

Ingredients

  • 3 eggs
  • 2 TBS butter, melted
  • 2 TBS coconut milk
  • 30 drops liquid stevia
  • 1/4 tsp salt
  • 1/4 tsp vanilla
  • 1/4 cup sifted coconut flour
  • 1/4 tsp baking powder

Instructions

Blend together eggs, butter, coconut milk, stevia, salt and vanilla. Combine coconut flour with baking powder and mix thoroughly until there are no lumps. Pour into greased muffin cups and bake at 400 for 15 min. Makes 6 muffins.
*Blueberry muffins - add 1/2 cup blueberries and make sure fruit is dry. increase baking time to 16-18 min
