This recipe is just a favorite after-school snack that I make every once in a while. Really GOOD!

Yield: 1-2 servings


  • 2 tablespoons olive oil
  • 20+ corn tortilla chips
  • 4 cheese slices
  • mild or medium salsa


Coat the bottom of a 9x9-inch glass dish with oil. Spread chips around the dish in layers. Place cheese slices on the chips. Gently spoon salsa over cheese, as much as needed, but not to make the chips soggy. Broil until cheese is melted. Serve hot.
