Mustard Chicken

Spoon out the crumb coating that falls to the bottom of the pan and serve alongsde the chicken. –Sycamore Inn, Arlington, Vermont

Yield: Serves 4

Ingredients

  • 1/2 stick butter or margarine
  • 2 tablespoons Dijon-style mustard
  • 1 cup bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon tarragon
  • 1 cut-up chicken (about 3-1/2 pounds)

Instructions

In small saucepan, melt butter and mustard. In small bowl, combine bread crumbs, grated cheese, and tarragon. Place chicken, skin side up, in baking pan. Generously brush with butter mixture; then sprinkle with half the crumbs. Turn chicken pieces over and repeat. Cover pan and place in 375 degrees F oven. Bake for 30 minutes. Remove cover, turn pieces over, and bake uncovered for another 30 minutes.
