Mexican Crock-Pot Meatloaf

Yield: 8 servings

Ingredients

  • 2 lbs ground beef
  • 2/3 cups taco sauce
  • 4 tbsp pkg taco mix
  • 2 cups coarsely crushed corn chips
  • 2 large eggs, lightly beaten
  • 1 cup grated jack or cheddar cheese

Instructions

Mix all ingredients in large bowl. Shape into a loaf and place in crock pot. Cover and cook on low 8 to 10 hours or on high 3 1/2 to 5 hours.
